About a month ago, John and I hosted our church’s community group for dinner. Since I wasn’t sure how many people were attending, I way overestimated the amount of rice that we needed. So that week, I planned a lot of recipes that called for rice. Then over the next couple weeks, John and I intentionally planned meals involving seasonal produce (without any rice involved ha!). The meal plan that I’m sharing below is a mash-up of our favorite rice recipes and seasonal dishes. Plus, they are all meals that our toddler loved eating with us too and were quick/easy to prepare.
Sunday – Beans & Rice (a favorite Bon Appetit recipe)
GM’s dinner: Beans, rice, shredded chicken, chopped tomato, and avocado
GM’s dinner: I roasted carrots ahead of time for the bibimbap recipe so he had carrots, zucchini (in the bibimbap), and surprise… leftover rice and beans
Tuesday – One Pot Pasta with Asparagus and Peas aka our new favorite pasta for Spring that I wrote about last week
GM’s dinner: Same as ours – and it was a hit!
Wednesday – Superfood Bowl from Vintage Mixer
I used quinoa instead of bulgar and loved the combo of the roasted chickpeas with beets and Brussels sprouts topped with the refreshing avocado dressing.
GM’s dinner: Grant is not a fan of beets (though we keep introducing them to him because you never know when he might change his mind!) and Brussels sprouts are hit or miss. So he chowed down on the quinoa, chickpeas, and avocado mostly.
Thursday – Avocado, Mozzarella, and Jalapeno Grilled Cheese from Naturally Ella
GM’s dinner: Grilled cheese minus the jalapeno sauce… what’s not to love about bread, cheese, and avocado?!
Friday – All the Green Things Salad from Cooking Light
Clearly peas and asparagus are in season since they’re featured in this recipe too. Good thing Grant Man loves them! To add more oomph to this salad, I also added in chickpeas that we’d had from Wednesday’s dinner.
GM’s dinner: We separated out the veggies from the greens for him to snack on along with the chickpeas.
Saturday – Any leftovers for Grant Man to eat and date night for John and me 🙂
