A year and a half ago I wrote about what working out has to do with being holy. Essentially, there is a connection between body, mind, and spirit. In order to “run the good race” we must take care of our bodies (1 Corinthians 9). And this includes healthy eating as well.
I enjoy including healthy, homemade recipes on this blog because of what Shauna Niequist in the excellent book Bread and Wine says:
“Each one of us should be able to nourish ourselves in the most basic way and to create meals and traditions around the table that tell the story of who we are to the people we care about.”
It’s all about honoring our bodies with healthy, delicious food while being in community, sharing our lives and sharing our stories with one another.
In order to encourage you that creating these meals and traditions doesn’t have to be fancy, here’s an easy but tasty crockpot recipe. A family friend originally sent this recipe to me, and after making it several times, here’s my version. (And it’s even better the day after!)
Crockpot Cashew Chicken with Coconut Quinoa
2 lbs boneless, skinless chicken thighs (thighs work better in the crockpot)
1/4 cup all purpose flour (I used a gluten free flour mix)
1/2 tsp black pepper
1 Tbsp canola oil
1/4 cup tamari
2 Tbsp rice wine vinegar
2 Tbsp ketchup
1 Tbsp brown sugar
2 tsp bottled garlic
1/2 tsp grated fresh ginger
1/4 tsp red pepper flakes
1/2 to 3/4 cup cashews (depending on how much you want)
- Combine flour and pepper in large Ziploc bag; add chicken and shake to coat.
- Heat skillet over medium-high heat. Add canola oil. Brown chicken about 2 minutes on each side.
- Place chicken in slow cooker. Combine tamari, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes; pour over chicken.
- Cook on low for 3 1/2 hours.
- Before serving, shred chicken, add cashews and stir. Serve over quinoa (recipe below).
Pour 1 cup of quinoa in a sieve and rinse thoroughly under water. Add quinoa to a medium size pot. Add 1 cup water and 1 cup coconut milk. (I used Trader Joe’s canned version.) Once quinoa is done (about 15 minutes) squeeze lime over top before serving.
